Aromas smack of white lilies and minerals in this yellow green hued spirit. The earthy minerals are echoed on the palate with suggestions of lightly roasted coffee bean and charred vanilla, finishing dry and satiny on the tongue.
Primary product The pomace, collected when it is fresh and soft, is selected from Chardonnay grapes from dedicated production zones. Fermentation In stainless steel tanks under vacuum and in a controlled temperature environment. This is followed immediately by distillation in order to avoid harmful secondary fermentations.
