We all know the adage “white wine for fish, red wine for meat” … but what do you drink with salad? Find out which wines pair best with your favourite healthy, leafy treat.
1) High-acid wines
If your salad includes high-acid ingredients such as goat cheese, tomato or citrus fruit, opt for high-acid wines such as Sauvignon Blanc, Riesling, sparkling wine and Champagne. The acidity of these wines can balance out even the most tart vinaigrettes.
2) Reds with decent acidity and modest tannin
Reds with decent acidity and modest tannin can be served lightly chilled, despite what you've been told. While chilling may mute their flavours slightly, it makes them more temperamentally similar to cold foods. For instance, a chilled Beaujolais could work well for any salad -- Cru Beaujolais in particular.
3) Fruity and sweet wines
Pungent ingredients such as anchovies could be balanced with a fruity and even sweet vino. We like Black Tower out of Germany to work well with a Caesar salad but if you wanted something less sweet, try a California or Washington State Riesling.
4) Gewürztraminer and pinot noir When salads feel like hearty meals, you want a wine that enhances the strong flavours and doesn't compete with them. Try a bottle of fragrant gewürztraminer with a Cobb salad or pinot noir with a meat-heavy salad.
Creamy dressings need to be paired with something to complement the dairy, so serve yourself a Chardonnay, which shares flavour compound diacetyl with cream and butter.
